Rainbow Dash Party

My sweet, little niece turned the big 4 this month! She is an avid collector of Rainbow Dash paraphernalia, so the only logical thing to make for her cake was this:



 For those of you who don't follow the show, that's Rainbow Dash's cutie mark. She earned her mark when she discovered racing and went so fast she created a SONIC RAINBOOM! You can educate yourself here

The best part about making a cake for a kid's party is surprising them again and again. My niece was excited about the decorations on top, but she never expected a rainbow inside her cake let alone extra candy at the center! A child's sugar dream.



Unlike many store-bought cakes, this one actually tasted good. It had cream cheese/whipped cream frosting and I used homemade applesauce in the cake batter. It was moist, colorful and delicious. Plus, Skittles and Sixlets!
